- 3 cups sliced fresh mushrooms
- 2 cups meat, Bacon, ham or chorizo
- 1 1/2 cups chopped onions
- 1 1/2 cups chopped green peppers
- 2 cloves garlic
- 1/2 cup chillies
- 1 1/2 cup tomatoes
- 1/3 cup vegetable oil
- 12 eggs
- 4 cups cubed day-old bread
- 1 teaspoon salt
- 6 cups shredded Cheddar cheese
- 1/2 teaspoon pepper
- Preheat oven 350 degrees F
- 1/2 cup half-and-half cream In a large skillet, saute the mushrooms, chillies, tomatoes , ham, onions, green peppers and garlic in oil until vegetables are tender. Drain and pat dry; set aside.
- In a large mixing bowl, mix half the cheese and cream until smooth. Beat in eggs. Stir in the bread let mixture soak into bread. 10 min
- Add salt, pepper and vegetable mixture.
- Pour into two greased 11-in. x 7-in. x 2-in. baking dishes add rest of cheese.
- Bake, uncovered, at 350 degrees F
- set timer for 35-40 minute or until a knife inserted near the center comes out clean. Let stand for 10 minutes before serving.
WOW! what an incredibly productive summer with a few photo road trips. I completed 2 vibrant paintings with leftover paint and inks. Made new clients and found the right home for one of my favorite works. Plus I have recently been collaborating with my father who makes Barn Wood Frames.
