A quick easy lunch so you can spend more time in the garden before work.
1 cucumber
Wisk continuously
add twice the amount of EVOO (Extra virgin olive oil)
Combine the 2 in a large zip lock bag and let marinade over night.
to serve drain extra dressing in colander and top with a hard cheese.

Saute the following in a wok style pan

yellow onion by itself until it sweats
cut yellow squash
crimini mushroom

de glaze pan with a little white wine or sparkling water
simmer till squash is soft but crunchy
chicken

BBQ sauce
BBQ till done
165 degrees
